Brenda, after spending 40 years in the hospitality industry—most recently overseeing all restaurants at The Hotel Hershey—I quickly realized that retirement wasn’t for me. I couldn't sit still, and after months of cleaning, painting, and rearranging my home, I knew I needed something more. When Paul’s brother considered buying a restaurant space but ultimately backed out, we saw an opportunity. We had spent their careers working for others in the restaurant industry, but wanted something of our own—something where we could fully express our creativity, hospitality, and passion for food.
Taking the Leap: The decision to buy the restaurant wasn’t easy, but we knew we were up for the challenge. We understood the risks, but the desire for ownership and the ability to create something special outweighed any hesitation.
Breaking Free from Corporate Constraints: After decades in the industry, we longed for the freedom to decorate for every holiday, create a menu without restrictions, and provide the level of service we believed in—things we couldn’t fully do in a corporate setting.
Weathering the Pandemic: Shortly after purchasing the bistro, renovations began. Then COVID-19 hit. With shutdowns in place, we had to rethink everything. Instead of waiting for things to reopen, we adapted—bringing a food truck to retirement communities where residents couldn’t go out, keeping our name and food in front of customers. It was just enough to keep going, and when restrictions lifted, the locals returned in full force.
We are driven by our love for the restaurant industry, our passion for serving people, and the joy of creating memorable experiences. Thankfully, we wake up excited to go to work every day, knowing we get to do what we love—together.

Renovating the restaurant during COVID-19 was a major challenge. Just as we started tearing down walls, the world shut down. With uncertainty looming, we had to find creative ways to stay relevant and keep revenue coming in. We turned to a food truck, bringing meals to communities that couldn’t go out. The pivot kept us afloat, ensuring that when people were ready to dine in again, Hershey Bistro was still here to welcome them.

We are actively involved with the Milton Hershey School and support both the school and its Alumni Association. We love giving back to students, sharing their journey, and offering insights to the next generation.
Brenda rescues cats! She has a soft spot for stray felines, taking them in, getting them vaccinated, and finding them homes—if she doesn’t end up keeping them herself.
Paul never says no. He’s a twin and has 8 siblings! He is a proud graduate of Milton Hershey School!
